Easy Vegan Dinner Ideas

Have you heard of Veganuary? I think its one of the newest diet crazes to do a month of. I know a lot of people are trying to stick to a budget, or trying Keto, or Whole 30 as a New Resolution. But I just found out about Veganuary… Basically, it is eating like a Vegan for a month. That doesn’t sound too bad. Honestly, I am looking for new ways to eat more veggies and fruits so I thought this would be a fun one to try!
I will be honest I am not a vegan.
But I am adding more vegan dishes into our meals for the next week. I hope to add more and more meatless meals into our weekly meal plans as the year goes on. Meat is a huge part of our lives, so it would be hard to cut it out entirely. Most of my protein comes directly from meat! However, I did notice that cutting out meat for the week has cut our grocery budget, which is amazing!
Vegan Meal Prep
What a great way to add some meal prep into our week as well! All of these recipes would work for a meal prep! Cook it all on Sunday and you would have a great variety of foods for the week through your meal prep. When I do meal prep I keep it pretty similar with ingredients. So I would do the Mexican Sweet Potato Bake and the Instant Pot Chili because they use a lof of similar ingredients.
Meal Plan:
Monday: Lo Mein
Tuesday: Mexican Sweet Potato Bake
Wednesday: Sesame Orange Ginger Chickpea Stir Fry
Thursday: Instant Pot Chili
Friday: BBQ Tofu Bowls
Saturday: Chickpea Curry
Sunday: Mushroom Stroganoff

Soy sauce
Sesame Oil
Mirin
2 Vegetable Broth
BBQ sauce
Light coconut milk
Pineapple chunks
2 cans Chickpeas
28 oz Tomato puree
28 oz Diced tomatoes

Week’s Worth of Vegan Dinner Ideas
Lo Mein
This week has 2 different Asian dishes. I love Asian food! And this one is super duper simple! I used frozen veggies because that makes this dish SO much easier. It did add a bit of time to cooking but I think it was worth it. Perfect for a Monday night after cheer practice! This is the EASIEST and BEST dish EVER! HAHA! But seriously, throw some veggies in a wok, make the ramen, mix up the sauce, and then put it all together! DONE! YUMMY!!!
One Pan Mexican Sweet Potato Bake
Another easy one for you! You know I love an easy to throw together meal! I mean, we are all busy and have little time. So, I thought this would be a great Taco Tuesday meal. This dish is so good! Classic Mexican flavors in an easy to throw together dish! I topped mine with some Medium Salsa which gave it a bit more of a kick! Delicious!
Healthy Sesame Orange Ginger Chickpea Stir Fry
I love a good Asian inspired dish! But you knew that already… This one is fun and a bit different with the orange juice. It made me think of orange chicken but with veggies! YUM! And this dish was so easy to put together. I used canned green beans, so they aren’t as green as fresh ones. But I think it turned out so well!
Vegan Instant Pot Chili
I LOVE CHILI. Any dish where I can just throw everything into a pot and let it cook, sign me up! Best part, this is made in the Instant Pot, so it will be done faster which is perfect for a weeknight meal! Ok, so I have never had a vegan chili, I mean most of the chilis Ihave had are LOADED with meat! So this was a new one for me. I also am not a huge fan of beans but this worked! Everything tasted so good!
Vegan BBQ Tofu Bowls
I haven’t had Tofu in a VERY long time, about 13 years or so. The last time I made tofu was when I was in high school cooking class. Tofu is exactly how I remember, I bit rubbery. hahaha… BUT it did take the flavor of the BBQ and I let it sit in the Fridge for 3 hours before baking it. I like this BBQ bowl! Definitely a fun change to dinner!
Easy Vegetable Chickpea Curry
This is my first time EVER having any kind of curry. I was nervous at first, as I always am with trying new foods. But this turned out so well! Jacob says its not as bold of a Curry flavor (which is probably good for me) but we all liked it. I am definitely trying this again and will add a bit more Curry powder in it!
Vegan Mushroom Stroganoff
Growing up, I had a lot of Hamburger Helper Beef Stroganoff. I’m pretty sure my mom kept the pantry STOCKED with Hamburger Helper. Hey, it was a quick, cheap meal to make. I mean she worked, my dad worked, and they had 4 kids! I loved beef stroganoff. The creamy meaty noodle dish was amazing. So, I was happy to come across this vegan mushroom stroganoff and definitely knew I needed to make it!
This is 100% a winner! So delicious and so easy to make and pretty quick too! Honestly, I did not miss the meat at all. Jacob said he did but he did eat his ENTIRE plate! SO….. Yeah! Make this! It is so good. Also, we had Organic Penne noodles with it.
These look great I heard about veganuary but only managed to last two days I know I am weak but I will be trying these meals.
I had a hard time with eating enough protein!
Yay! A fellow non-vegan who likes vegan food! I’m not a vegan either but I love to shake things up during the week with a couple of vegan dishes. It stops things from getting boring 🙂

The chickpea stir fry and the chilli have to be my favorites since I’m such a fun of frying my veges and also, chilli. What I’ll need is just a plate of steaming rice.

All of these dishes look easy and delicious but I think my favorite by far is the Mexican Sweet Potato Bake. The runner up would be the ramen dish because I love love love ramen ^_^
