Healthy Mug Cakes

Mug Cakes
Mug cakes are fun, single serving way to satisfy your sweet tooth! Seriously, why didn’t I do these growing up? Cake is my favorite sweet thing to eat! If I could have funfetti cake everyday, I would! So who ever came up with mug cakes, you deserve a medal! They are so quick, so easy, and so fun to eat!
Pinterest has a lot of mug cake recipes and I tried a bunch (even have one in my breakfast post) and these are my favorites.
Low Carb Cinnamon Roll Mug Cake
Ok, The Big Man’s World, you are great at putting together healthy desserts! I found a BUNCH of mug cakes from his blog and the first one that jumped out at me was Low Carb Cinnamon Roll Mug Cake! Who doesn’t love cinnamon rolls?
This is so YUMMMY! It had the perfect amount of sweetness and cinnamon flavor! I ended up using Quest Cinnamon Crunch Protein and I did not add any sweetener. Quest protein powder has the perfect amount of sweetness so when I cook with it, I hardly ever add sweetener. I also used regular butter for the glaze instead of coconut butter. The kids LOVED this mug cake! It was perfect for breakfast!
Blueberry Baked Oatmeal Mug Cake
So I saw this Blueberry Baked Oatmeal Mug Cake from Chocolate Covered Katie and I knew I needed to try it. I was on a blueberry kick and this was great for it! And since it had oats, its a bit different than the typical mug cake!
This is so sweet! I think next time, I will not add maple syrup because it was a bit too sweet for me. Also, I used unsweetened applesauce and unsweetened vanilla almond milk. I love sweet but I know some people are not a HUGE fan of over sweet foods. If you love blueberries and oatmeal, you will love this mug cake!
Healthy 1 Minute Vanilla Cake
This cake is perfect for a birthday mug cake! I saw this recipe from The Big Man’s World (he has a lot of great healthy desserts) and I absolutely needed to try it! The best part? I tried it on my daughter’s 5th birthday! So fun!
This mug cake had a few more steps than usual but it tasted just like birthday cake! I used gluten free flour instead of almond flour and I used brown sugar as my sweetener. I also used Unsweetened Vanilla Almond milk! The results were amazing! The birthday girl, her brother and I loved it!! SO yummy!
Healthy 1 Minute Pumpkin Mug Cake
Ok, The Big Man’s World… You come up with some yummy mug cakes! I was craving a cupcake and a pumpkin spice latte… Well, I found this recipe on Pinterest and figured, hey I should try it! I mean it is fall!!!
YUMMMMMMYYYY!! This tastes JUST like pumpkin pie, I mean it helped that I add Reddi Wip on top of it! Ahaha. But I did change a few things. I used maple syrup as the sweetener and I added pumpkin pie spice. You can’t have a pumpkin mug cake without pumpkin pie spice, right? Ok, maybe you can… But I LOVE pumpkin pie spice, I add it into my french toast! But this turned out so well! I highly, highly recommend!!
I’m beginning to think I should call this post, The Big Man’s World Best NonChocolate Mug Cakes!! HAHA! I wonder what he would think of that?? He comes up with some great recipes! Everyone should check them out!
