So I’ve been looking for a way to try some different meals with my family. I love meat, don’t get me wrong but sometimes it’s nice to NOT have to worry about cooking meat with every meal. And not to mention, it is nice to save some money. Meat tends to be the most expensive thing at the grocery store. Its crazy! And I figured a meatless Monday would be an easy way to ease my family into this. My family LOVES meat… ha

Well, I decided to do what most people do when it comes to looking for new recipes, I went on pinterest. Oh, I love pinterest! I put in meatless meals and meatless Mondays, and saw some that I would actually like to try. So, here are 3 of my favorite meatless Monday meals!

 

 

Baked Eggplant Parmesan

OMG! This is delicious! So I was looking for some creative ways to do meatless Mondays. I mean, I need my husband who is the huge carnivore to eat this meatless meal as well! Well, I came across this baked eggplant parmesan dish from Gimme Some Oven and it was love at first sight! Therefore, I needed to try it!

So I started making it. It is super simple! I didn’t have breadcrumbs and weirdly, couldn’t find them at the store… so I used Gluten Free All Purpose Flour. So yay! Gluten free dish! Anyway, I love how easy this dish is to make!

For a side, we had cauliflower risotto! Just saw this in the grocery store and had to try it! It was perfect for my low carb hubby! It was so rich and creamy.

OMG OMG OMG! This Meatless Monday dinner was perfect for our family! My hubby said it was good! And my 4 year old daughter said it was good! However, my 3 year old son liked the cheese and tomato but not the eggplant…. Haha! But ¾ is definitely a win in my book! I highly recommend you try this amazing meal!!

Easy Lo Mein

Ever crave Chinese food? No, just me? Haha! Chinese food is amazing. The sauce; the veggies; the perfectly cooked noodles; the soy sauce… Oh I said sauce already.. I love soy sauce… Like a bit too much. Ha. My family and I used to order take out a lot from a local place. It was always so good but we are trying to be healthier. So its been a while since we actually had Chinese food… and I wanted to have some Chinese food so I went on a quest for a meatless Monday Chinese dish!

I came across this recipe from Damn Delicious. It is very good. I will be honest with you… I doubled the sauce but I felt like it was a bit dry. But the mixture of spices and sauces in the sauce was great! And it was easy! We ended up using regular spaghetti noodles and they worked well! Our daughter ate her whole serving! Yes! My husband and I both ate all of ours! Woo! My 3 year old son… well he is a work in progress. Hahaha! If you want a quick and easy lo mein dish, try this! It is definitely worth it! And I know I will definitely be making this again.. And I may add Sweet Chili sauce… YUM!

Portobello Philly Cheese “Steaks”

Ok.. So if you read my prior dinner post, I posted about LOVING Philly Cheese Steaks. I said I was eating them ALL the time. But I am very traditional in my Philly Cheese steaks. For example, I have never had them with chicken and I definitely have never had them without meat… Well why not make it a meatless Monday meal? So this one was a must try when I came across it from Domestic Superhero!

And we thought it was great! You don’t even miss the meat! Well I mean portobello mushrooms are so meaty which helps. I did change up the recipe a bit. I added pepper jack cheese instead of provolone because I love the spices with a Philly Cheese steak! And I used Hawaiian rolls because if I’m going to have a bun, I want it to be sweet. Haha… The only bad thing about the Hawaiian rolls is that it did not hold everything together. So next time, I will get Hawaiian Roll Buns! Also, this recipe was super simple to make! Definitely try it!!
