I am not a food blogger. I do not take perfect photos or even come up with amazing recipes. However, I do love food! I definitely love to eat! So when I come across great recipes I want to take the time and share them. That being said, I put together 5 of my favorite healthy dinners that are pretty easy to make! All the pictures are mine, not too bad, huh?  And I have linked to each original blog post that has the recipe.


Creamy Enchilada Chicken Breast


I am a huge fan of easy to make meals! Anything that will only take me a few minutes to prep and either throw in my oven, slow cooker or Instant Pot, sign me up! And this recipe is so easy to make! It only takes a few minutes to prep and then throw in the oven! 

My family loves Mexican type dishes. The spices, the flavors, yum! We love taco Tuesday or rather taco anyday!

Well, lowcarb-ology has creamy chicken enchiladas that are a low-carb (and cheesy) healthy dinner and I had to make for my family! AND we love it. If you didn’t know it was low carb, there is no way of telling that it is! It is so creamy; there is so many Mexican flavors; it is so cheesy (who doesn’t love cheese); it is perfect!!




Philly Cheese Steak Stuffed Peppers


Sometimes I wonder if I should have grown up in Philadelphia with how obsessed I am with Philly cheese steaks. I think I have made them and ate them in almost every way possible… My poor family. I mean I definitely could (and sometimes do) buy roast beef weekly!

My husband is pretty much low carb but I still love my Philly cheese steaks and I came across this recipe! It is so good! The creamy cheese (I changed it out for pepperjack to add a spicy kick!), the garlic, the peppers, onions, mushrooms and most of all, roast beefYes!! I could eat this everyday! It takes some prep but is definitely worth it if you are craving a wonderful Philly cheese steak!

Mrs. Happy Homemaker definitely knows a philly cheesesteak! I highly recommended this recipe!



BBQ Chicken & Roasted Sweet Potato Bowls


I am a HUGE BBQ fan. I think I get that from my dad… I love BBQ sauce on chicken, brats, hamburgers, pork, (pretty much anything you can grill!) and sometimes even salad. Yeah, I’m a little crazy for BBQ. We always have bottles in the pantry. But hey, you can never have too much BBQ sauce!

I was looking for a recipe that used some chicken breast, sweet potatoes and onion that I needed to cook up and I came across this recipe for BBQ chicken & roasted sweet potato bowls. And let me tell you, it is super simple to make! And yeah, I used a plate instead of a bowl… Still works, right?

It combines 4 of my top 10 favorite food items: BBQ sauce, chicken breast, sweet potatoes and broccoli! YUM! You definitely need to check out this recipe from The Creative Bite if you are looking for a pretty easy and super yummy recipe to make!  



Low Carb Pepperoni Pizza Chicken


So I know I have been talking a lot about my favorite foods… well pizza is definitely top 3! I mean who hates pizza? No one! It is so good! Warm, melty cheese; spicy pepperoni; rich tomato sauce; and a crisp thin crust (or deep dish from Chicago!!).

Well, if you are one of the millions of people trying to cut back on carbs, eat more protein and are in love with pizza, this is the recipe for you. The chicken breast acts like a crust and the Italian seasoning on the breast really makes you think you are eating pizza crust!

Mom Luck, this recipe is amazing! I believe I have made this at least once a week for a couple of months straight! I mean can you blame me? I love pizza!!



Eggs in Hell with Italian Sausage


Ok, my final healthy dinner is from Averie Cooks: Eggs in Hell with Italian Sausage. I was looking for a lower carb meal that was kind of Italian. I saw this and had to try it. I am so happy I did. I love eggs, have them every morning but, I’m not going to lie, at first I was nervous to add the egg in this. But Oh my gosh!!! The egg tasted was sort of like a noodle! Maybe it was just my brain tricking me into thinking that but hey, I’m not mad about that!

Just like Averie Cooks, I used hot italian sausage and it the heat was perfect. My husband added cottage cheese to his and said it tasted similar to lasagna! WIN! The kids and I ate it with garlic bread and it was the perfect Italian dinner!

I definitely recommend EVERYONE try this recipe! It takes some prep but it is definitely worth it. I tried it with runny eggs and hard eggs and both are great! 




As you can tell in 3 of my 5 pictures… we eat a lot of broccoli here!! Hey, if the kids eat it, then who can be mad at that?

I have a low carb theme here. I just want to say, I am not anti-carb, I am the exact opposite. I love carbs. I need carbs. I eat them and I have no shame in it! But I also respect that some people do need to be low carb for various reasons. If you are pro-carb like me, you can definitely add more carbs into these meals! I definitely do for myself and the kids!
