Super easy and healthy pancakes… from a mix?!

If you are anything like me, mornings are super busy. 2 kids going in 2 different directions, needing to run here and there, needing to get your morning workout in… just BUSY! We needed an easy and quick breakfast that the kids would love! And I came across Kodiak Cakes at Target (and I also found them on Amazon cheaper!). Then after reading the label I thought I would give them a try. I love pancakes and definitely cannot pass up healthy pancakes!

Any product where all I need to add is water is winner to me! And the best part, you can read and understand every ingredient on the label! Love that!

So the next morning, I put some coconut oil on a pan… mixed 1 cup of the Kodiak Cakes buttermilk protein packed mix with 1 cup of water… put it in the pan and cooked up some pancakes for my family.

Oh My Goodness! These pancakes are AMAZING!

They are so fluffy. So yummy. And goodness, there are so buttery (and coconut-y)!

We are obsessed…

At this point, We are obsessed with these warm, fluffy pancakes and I’m pretty sure I make them at least 4 times a week… maybe more! I am not ashamed! Sometimes when I have no idea what to make for lunch or dinner, we will have pancakes!

Next time you are looking for a quick, easy and healthy pancake mix, check out Kodiak Cakes! I have tried buttermilk and crunchy peanut butter; both are so good!

Also, if you want to add a bit more protein, you could use milk instead of water or even add an egg or my favorite adding protein powder. I always add Quest Salted Caramel protein powder and it gives it the perfect amount of sweetness, no syrup necessary!!
